Chad’s crepes – a family secret

Chad’s crepes (this makes a lot of crepes halve it for less than 4-5 adults)

9 eggs
2 cups of flour
2 cups of milk (this is more to eye, the mix should mix easily while on the second to lowest setting inside a blender)
1 cup of sugar
1 tablespoon of vanilla
2 tablespoons of melted butter
Cinnamon to taste
A pinch of salt

The most important part of the recipe is to get the consistency of the batter correct. It should not be too thin or too thick. You know you have made them correctly if you can eat them by themselves without anything on them. They are just sweet enough, not flaky and not too thick. We fill them berries, nutella, vanilla yogurt, bananas or any combination thereof. We top them with powdered sugar, syrup, or simply lemon and powdered sugar.

You can also make bacon and eggs and use the crepes to wrap it up like a burrito.

You can also fill it with bananas, ice cream, and put caramel sauce inside them for banana’s fosters for a desert.

INSTRUCTIONS:
Put the eggs in a blender, and mix in the flour while the eggs blend (making sure not to whip the eggs). Add the milk followed by the rest of the ingredients.

Cook on a griddle on medium heat. I have a “wooden T” tool used specifically for making crepes which help even out the batter in a circle. You dip the T in water so it glides over the top of the crepe. You want to thin it out a bit so that the crepes are the right thickness. If you don’t have a T, then you can tilt and swirl the batter on the griddle to thin it out. I have also done them in a large non-stick pan. If you don’t have a T, then a pan is easier to thin the batter in.

Battling hubris and writing down amazing

One thing that this year has taught me is that you have to be thankful for what you have, and constantly fight against the inclination to complain. I have had the opportunity to do some amazing things this year. If I ever complain or seem to complain. You all have permission to smack me and remind me of this post. I try and catch myself, but you have permission to help me.

Trip to India, to the Taj Mahal, and Germany
Performed again at the Poway Center of the Performing Arts MET2
Found a wonderful program for the piano called Synthesiagame.com
My parents 50th anniversary
Countless family accomplishments to (Trombone solos, to saving tackles in football, singing lessons, the list goes on).

Glenn and Michal’s 50th anniversary

Give thanks to a teacher

In this connected world we live in, what better use of the internet could there be but to post praise about a teacher. I recommend everyone take the time to praise and thank a teacher of theirs from their past on a blog or website. I had to share what a wonderful experience I had recently with doing this. Everyone has one or two teachers that changed your life. To this day, I remember Mrs. Simard in Junior High who taught us the Preamble of the Constitution. To this day, I can recite it word for word (and even the tune we learned it with).

Years ago, I posted a thank you note to a music teacher I had in school and just recently her daughter found it and forwarded it to her. It was a very special experience which I wanted to share… You should follow the link below to the post and read the comments. It was great!

My role as father

This set of pictures has always been significant to me since this is how I feel as a father. It shows my philosophy. Allow the joy of life to rain all over your kids while keeping them safe. If they are scared, walk them right up to the edge … comfort them, make them feel safe and then let the joy of life get all over.
